Emma Beno’s history in The West Side Market leaves no doubt about her success with The Pork Chop Shop. Her many summers spent working in the market stems from Saturday shopping days with her father. She too-at 14 -landed her first gig with one of the cheese stands and made her way through a bakery before settling down on pork. Becoming the market’s youngest stand owner in quite some time, Emma opened The Pork Chop Shop with her sidekick at just 21. A protege of many male butchers in the market, Emma took to the craft right away, perfecting both the art and the darkside of butchery. Her many ways to flavor sausage comes from both talent and trial and error. As the company has grown-so has she as she has taken her place as secretary among the west side market’s tenants association. Her love for the community and the city isn’t limited to just delivering great pork; it is also being a voice for the rest of the organization- as she is deeply involved and committed to making the quality of her community better.
